Sandwich Stamp Cookies
I thought I would do some more baking today as I have been hanging out to use our new sandwich stamps to make some cookies

I found this super easy basic cookie dough recipe and have just tweaked it a little. Not only is it so much easier than my old recipe but because it is a basic recipe you can then add whatever you like to the dough mix such as mini m&m’s, choc chips, cocoa etc.
Basic Cookie Dough Recipe
You will need:
125g of Softened Butter (I used margarine as I didn’t have any butter on hand)
1/2 Cup of Caster Sugar
1/2 tsp of Vanilla Extract
1 Egg (make sure it is at room temperature)
2 Cups of Plain Flour
1 tsp of Baking Powder
1 Tbsp of Milk
Method:
Preheat oven to 180°C.
Line 2 baking trays with baking paper and set aside.
Use an electric mixer to beat butter, sugar and vanilla until pale and creamy then add the egg and mix until well combined.
Sift flour and baking powder over butter mixture then add the milk and mix well using your hands if need be.
Roll the dough out on the bench (use a little flour if need be to stop the dough from sticking) then use either the sandwich stamps and/or mini cutters to cut the dough into cute shapes.
When using the sandwich stamps it is a good idea to place the cut out back in cutter on the cooking tray so you can use the stamp to make the cute little faces without the cookie loosing it’s shape.
Bake for 12-15 minutes or until light golden.
Allow to cool on trays for 5 minutes.
Then move them to a cooling rack and allow them to cool completely before decorating.
How cute are those sandwich stamp cookies with their cute little faces! Almost too good to eat (notice how I said almost lol), we used some Nutino (chocolate spread) to make cookie sandwiches for the ones on the pink plate and some lemon icing (2 Tbsp of softened butter, 4 Tbsp of icing sugar (sifted), a few drops vanilla essence and a squirt of lemon juice to taste) for the ones on the blue plate.
And I just couldn’t resist making some cute little mini cutter cookies decorated with some coloured icing, Smarties and mini m&m’s I particularly love the UFO and the ‘supposed to be a bunny’ green alien with the blue eyes!
