In the spirit of Mr 7 (who I now need to start calling Mr 8)’s birthday today I thought I’d blog my favorite chocolate cake recipe, its super easy and my motto is ‘if you’re going to eat something anyway why not look for ways to make it healthier’ now I’m by no means suggesting this is a ‘healthy’ recipe however comparatively speaking it has just 7 ingredients whereas a store bought cake has around 30, half of which I can’t even pronounce! and packet cake mixes aren’t much better either! I know there are some good ones out there but just look at this ingredient list from a popular brand of packet chocolate cake mix;

So if I was going to feed my child chocolate cake (in this instant its cupcakes for Mr 8′s class) I would certainly want to avoid as many nastiest as I could, yes I did pop mini M&M’s on top but they’re a treat and have been portioned out to 5 M&M’s per cupcake because whilst I am a huge advocate for ‘from scratch cooking’ I’m not a food totalitarian! and don’t mind the odd treat.

Easy Chocolate Cake Mix

You will need:

1 Cup self raising flour

1 Cup of sugar

3 Tablespoons of cocoa

2/3 Cup of milk

2 Egg

50gm Melted butter

A drop of vanilla extract

Method:

Pre heat oven to 180 degrees

Spray either a round cake tray with cooking oil or line a 12 cup or 2x 6 cup muffin tins with cupcake liners and set aside

Place all the dry ingredients in a bowl and give them a mix, then add all the wet ingredients and mix with a mixing spoon until combined

Then using an electric mixer beat for 3 minute

Spoon mixture into cake tin or evenly between the cupcake liners and bake for 50 minute for the cake or 18 minutes for the cupcakes or until a skewer comes out clean

Allow too cool and decorate :)
