Turkey Meatballs
Now turkey isn’t a meat that my family usually eat, there is no particular reason for this, I guess its just because I don’t have any recipes that use it, so I thought I’d change all that and see what I could come up with, so here we have a nice easy recipe for yummy turkey meatballs.
Turkey Meatballs
You will need;
500g turkey mince
1/3 cup Panko breadcrumbs (or any breadcrumbs I just LOVE Panko breadcrumbs)
¼ cup fresh parmesan cheese
1 egg
1 tablespoon tomato paste
1 glove of garlic (minced)
Approx 1 tablespoon of finely chopped parsley
Method;
Pre heat oven to 180 degrees
Line a large baking tray with foil and give it a light spray with cooking oil (this will stop the meatballs from sticking)
Place all of your ingredients into a mixing bowl and stir until combined
Take desired amounts of meatball mix and roll into a ball shaping using your hands (making sure your meatballs are all of similar size will ensure they all cook evenly)
Place each meatball onto your pre-prepared baking tray and repeat until all the remaining mix has been made into meatballs
Place meatballs into the oven for 20-25 minutes or until cooked through
Remove and allow to cool slightly and enjoy
When I normally make meatballs I always make a double batch and then pop single serves of about 3-5 (depending on their size) in zip lock bags and then pop them in the freezer, they can then be taken out and thawed in the fridge the night before you need them and are great popped in the lunchbox for the little ones.
