Pop ‘em Pizza
A friend of mine from America posted a pic of a delicious creation a few weeks ago, it was very drool worthy! when I asked her what it was she told me it was a Pop ‘em Pizza, I did a quick Google and there are many recipes for this dish but I thought I’d just wing it and make up my own. I made 2 of these, the first being a salami and cheese one (the one I photographed) and the second being a cheese and bacon one, I really think the cheese and bacon one suited this recipe best but you can make all sorts of flavors and add all sorts of fillings, the possibilities are endless. I just love this style of pizza!
I cheated and used pre made pizza dough (yeast and I just do not work well together) but if you have your own pizza dough recipe feel free to use that instead.
Pop ‘em Pizza
You will need:
1pk of Riviera pizza dough (prepared as directed)
Around 50g of mozzarella cheese
8 slices of salami (cut in half to make 16 slices)
Fresh parmesan cheese
Cooking oil spray
Pre heat oven to 190 degrees
Spray a glass baking dish with cooking oil and set aside
Place your pizza dough on a lightly floured bench
Roll out into a large rectangle and trim the side so its nice and neat (I’ll share an idea for the leftover dough at the bottom of this post)
Cut the pizza dough slab into 15 equal parts (well as equal as you can get hehe)
Next take each bit in the palm of your hand and place a pinch of cheese into the center
Pop a folded up piece of salami in the center as well
Next fold the edges over the cheese and salami (or filling of your choice) pinching the top together to form a ball type shape
Place the pizza ball seam side down in to your baking dish and repeat, packing each ball in to the dish ensuring they are tightly packed
Give them a quick spray with cooking oil, sprinkle with parmesan and pop into the oven for 20 minutes or until golden brown
Remove, allow to cool slightly and enjoy!
So what can you do with the leftover/off cut pizza dough?
Step 1: Make it; Roll pizza dough into a rectangle shape and make a pizza as normal.
Step 2: Wrap it; Simply fold each side into the middle of the pizza so they overlap.
Step 3: Bake it; Pop it in to a preheated (200 degrees) for 30 minutes seam side down and you’re done!
