Breakfast Cups
This is a really simple way to make bacon and eggs and despite its name is great for any meal time and for putting in lunchboxes.
 Breakfast Cups
You will need:
6 slices of bread
6 eggs
4 rashes of short cut bacon
Some butter or margarine
Method:
Pre heat oven to 180 degrees
Dice the bacon, cook it in a frying pan and pop it onto some baking paper to drain and cool
Remove the crusts from the bread slices and butter the bread (here is what we did with the crusts we cut off)
Place the slices of bread buttered side down into a large muffin tin like so
Crack an egg in each muffin cup like so
Sprinkle the cooked bacon pieces over each muffin cup like so
Place them in the oven for 20-25 minutes until the egg is completely cooked
Remove, allow to cool slightly and enjoy
