In the spirit of Australia Day yesterday and our nations love of a good BBQ I thought I would share this quick & easy pasta salad recipe I came up with after being constantly outraged by the ever rising cost of the tiny pasta salads in the deli department at the supermarkets, not only is it delish it costs just under $5 to make a huge 1/2kg batch! and is great for lunchboxes for those non sandwich eating munchkins.

Quick & Easy Pasta Salad

 

 

You will need:

300g of Spiral Pasta

310g can of corn kernels

1 small Spanish Onion

¾ Cup of Thousand Island Dressing (chilled)

 

Method:

Cook pasta as directed, strain and place it into a large mixing bowl and allow to cool slightly.

While the pasta is cooling cut the Spanish onion into small strips and drain/wash the corn kernels.

Add all the ingredients to the pasta and mix them through.

Place salad in the fridge to chill for a few hours, ideally over night.

And enjoy!
